Chef Undressed’s Tyler Alford caught up with Josh Spisak of Koshu Wine Bar last week for the first installment of this series. Josh gave us the rundown on his cooking career, his favorite foods and wine, the music he likes listening to, and then topped it off by prepping one his favorite dishes; Golden Soft-Shell Crab with a lemongrass beurre blanc and blackberry gastrique.
